I’m not sure the photo really does this one justice, but WOW this dish is packed with flavour. It was one of those slow-cooked dishes which I really struggled NOT to eat before dinner time, it just smelled so GOOD!

It’s really simple to make but the flavours are fantastic, I really can’t recommend this enough.

Ingredients:

  • 1 tbsp olive oil
  • 550g lean cubed lamb
  • 1 onion, chopped
  • 2 garlic cloves, chopped

5 minute superfood flapjack recipe

Prep: 5 mins. Cooking 1 hour

Now, when I say 5 minutes, I’m not including time in the oven, just time it takes you away from doing other things. Also, don’t be put off by the word flapjack – I know it’s enough to make some people shudder (all that butter…) – but this uses condensed milk instead and is really more of a breakfast bar.

We get through about three trays of these a week on a good week, so I vary the fruit, nuts and seeds according to what I find in the cupboard. Below are the ingredients for our weekday basic version and the deluxe treaty version.
