I fancied something healthy for lunch today, and this is packed with taste and goodness, and best of all it only takes 5 minutes to throw together! I’ve always found cous cous a bit bland, but I recently discovered these packets of flavoured cous cous and they’re much more tasty!
- Ainsley Harriot lime & coriander cous cous
- 2 tomatoes
- Pack of cooked king prawns
- 1 avocado
- Fresh basil leaves
- 1/2 lemon
All you do is boil a kettle and mix the packet of cous cous with some boiling water (about 160ml) and leave to stand for a few minutes. While the cous cous is standing cut up the tomatoes and avocado. Then simply mix everything together and squeeze over some lemon – lovely!
