Now, when I say 5 minutes, I’m not including time in the oven, just time it takes you away from doing other things. Also, don’t be put off by the word flapjack – I know it’s enough to make some people shudder (all that butter…) – but this uses condensed milk instead and is really more of a breakfast bar.

We get through about three trays of these a week on a good week, so I vary the fruit, nuts and seeds according to what I find in the cupboard. Below are the ingredients for our weekday basic version and the deluxe treaty version.

You will need:

  • 1 can condensed milk 397g
  • 250g rolled oats (that’s the superfood bit)
  • 75g desiccated coconut

and either (for the weekday version)

  • 100g raisins
  • 100g pumpkin seeds

or (for the deluxe version)

  • 100g apricots
  • 100g macadamia nuts
  • 50g dark chocolate chips

Line a baking tray (approx 30cm x 30cm) with foil and pre-heat the oven to 130°C.

Put the condensed milk in a bowl and microwave on medium for a minute or so until it is warm and runny. Mix in the ingredients and press into the tray (a silicone spatula here helps stop it stick to everything!).

Cook for 45 minutes. When you take it out of the oven cut into squares (approx 16) and leave to cool.

    • Thanks Conor. These are so easy, there’s very little margin for error – I haven’t got much patience with temperamental recipes! 2 tips: don’t burn the condensed milk when you heat it, and the first time you cook the flapjacks turn your oven down to 120 degrees to be on the safe side 🙂
